Herb-Grilled Chicken Frites

Ingredients
1 3/4 pounds bone-in, skin-on chicken thighs
3/4 teaspoon salt, divided
3/4 teaspoon ground pepper, divided
5 tablespoons extra-virgin olive oil, divided
2 tablespoons lemon juice
1 1/2 cups chopped fresh herbs, such as basil, parsley, chives and/or oregano
1 1/2 pounds russet potatoes, cut into wedges
1/4 cup capers, rinsed
1/4 cup pickled jalapenos, rinsed
Directions
1. Preheat grill to medium-high.
2. Sprinkle chicken with 1/2 teaspoon each salt and pepper. Whisk 2 tablespoons oil, lemon juice and the herbs in a medium bowl. Reserve 1/2 cup for sauce, then add the chicken to the bowl and rub the remaining herb mixture onto it. Let stand for 5 minutes….
