Choose your own adventure with these noodles! They’re delicious with peanut butter and tahini alike. Plus, you can use whatever frozen vegetables you have on hand and finish the dish off with any herbs still hanging out in your crisper.
Pantry Peanut Noodles
Serves 4
Active Time: 20 minutes
Total Time: 20 minutes 8 ounces whole-wheat spaghetti
4 cups frozen vegetables, such as broccoli and/or peppers and onions
1/2 cup creamy natural peanut butter or tahini
1/4 cup reduced-sodium soy sauce
2 tablespoons lemon juice
1 clove garlic, grated
1 teaspoon honey
1/2 teaspoon crushed red pepper
2 tablespoons chopped unsalted peanuts or toasted sesame seeds
2 tablespoons chopped fresh chives and/or cilantro
